My Grandma’s Custard Cookies Recipe

These cookies have been a firm favourite in my family for decades! My Grandma used to make these all the time, not only for special occasions but also an everyday tea time biscuit treat for herself and my grandfather. The original recipe does not include almonds and white chocolate but I’ve evolved the recipe to give it a more nutty and chocolately flavour profile but you can leave them out if you’re a purest. 

Recipe: 
– 6 level Tablespoons of icing sugar. 
– 125g Butter 
– 125g Margerine 
– 6 Tablespoons of custard powder 
– 1 1/2 cups of cake flour

Additional: 
– 80g of white chocolate (I like Cadbury) 
– 1/2 a cup of chopped almonds. 
– A couple of Cadbury Astros for the top. 

Mix all the ingredients together in one mixing bowl. Grease the baking tray with butter or baking spray and roll small balls and press flat down on the tray using a fork. Then decorate te top with Cadbury Astros. 

Bake at 180 degrees 10 – 15 mins until very slight golden colour. 

Allow to cool on a baking trap before storing in a contain. These cookies can last for around 2 week , but mine only last a couple of days because they are so morish. Enjoy!
